Mouthwatering dishes made easy! How to cook with terracotta lids?
 
       Soak the terracotta lid in water for at least 10 minutes.      The terracotta becomes saturated with water.
      Brown the leg of lamb at a high temperature - this closes the
      pores to give a better flavour! Pour in red wine and stock.
     
 
     
        Add vegetables and spices, cover with the terracotta lid
      then place into a (cold!) oven and allow to braise in its
      own juice for 90 minutes at a temperature of    
      180 - 200 °C.

You can leave it to cook almost unattended: even if you need to add liquid, you can do this without lifting the lid by filling the recesses of the handle with warm water.
